Stuffed Bell Peppers
Stuffed Bell Peppers are a satisfying and nutritious meal, perfect for a weeknight dinner. Bell peppers are filled with a flavorful mixture of seasoned rice, beans, corn, and cheese, then baked until tender.

Ingredients
4 large bell peppers (any color) | 1 cup diced tomatoes |
1 cup cooked rice | 1 packet of Hop Barons Chili & Taco seasoning |
1 can (15 oz) black beans; drained and rinsed | 1/2 cup shredded cheese (cheddar; Monterey Jack, or Mexican blend) |
1 cup corn kernels (fresh; frozen, or canned) | Optional toppings: chopped cilantro; sour cream, salsa |
Preparation
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in the prepared baking dish.
In a large bowl, combine cooked rice, black beans, corn, diced tomatoes, and Hop Barons Chili & Taco seasoning. Mix well to combine.
Spoon the rice mixture evenly into each bell pepper, pressing down gently to pack the filling.
Sprinkle shredded cheese on top of each stuffed bell pepper.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
Serve the stuffed bell peppers with optional toppings like chopped cilantro, sour cream, and salsa.
