Ingredients

6 ears of corn husked 1/4 cup chopped fresh cilantro
1 1/2 oz Hop Barons Spicy Packet 1 lime, cut into wedges
1/2 cup mayonnaise 2 tablespoons butter; melted
1/2 cup sour cream or Mexican crema Optional: extra cotija cheese and cilantro for gar
1/2 cup crumbled cotija cheese (or feta as an alternative)

Preparation

Prep the Corn:

Preheat your grill to medium-high heat.

Husk the corn and remove all the silk.

Grill the Corn:

Brush the corn with melted butter.

Place the corn directly on the grill grates.

Grill the corn, turning occasionally, until all sides are charred and the kernels are tender, about 10-15 minutes.

Prepare the Coating:

In a medium bowl, mix together the mayonnaise, sour cream (or Mexican crema), and 1.5 oz Hop Barons Spicy Packet until well combined.

Coat the Corn:

Once the corn is grilled, remove it from the grill and let it cool slightly so it can be handled.

Using a brush or a spoon, generously coat each ear of corn with the spicy mayonnaise mixture.

Add Toppings:

Sprinkle the crumbled cotija cheese over the coated corn.

Garnish with chopped cilantro.

Optionally, add a sprinkle of extra cayenne pepper if you desire more heat.

Serve:

Serve the corn immediately with lime wedges on the side. Squeezing lime juice over the top adds a bright, fresh flavor that complements the spices.

Optional Garnish:

For a more elaborate presentation, you can add extra crumbled cotija cheese and chopped cilantro on top before serving.
