1/2 cup unsalted butter 4 cups seafood or fish stock
1/2 cup all-purpose flour 1 cup heavy cream
1 small onion finely; chopped 1 cup milk
2 celery stalks finely; chopped 1 pound fresh crab meat; picked over for shells
1 carrot, finely; chopped 2 tablespoons sherry (optional)
2 cloves garlic; minced Salt and pepper; to taste
1 Hop Barons Seafood Seasoning Packet Fresh parsley; chopped, for garnish


1. Prepare the Roux: In a large pot, melt the butter over medium heat.
