6 ears of corn husked 1/4 cup chopped fresh cilantro
1 1/2 oz Hop Barons Seasoning Packet 1 lime, cut into wedges
1/2 cup mayonnaise 2 tablespoons butter; melted
1/2 cup sour cream or Mexican crema Optional: extra cotija cheese and cilantro for gar
1/2 cup crumbled cotija cheese (or feta as an alternative)


Prep the Corn: Preheat your grill to medium-high heat. Husk the corn and remove all the silk.

Grill the Corn: Brush the corn with melted butter. Place the corn directly on the grill grates. Grill the corn, turning occasionally, until all sides are charred and the kernels are tender, about 10-15 minutes.

Prepare the Coating: In a medium bowl, mix together the mayonnaise, sour cream (or Mexican crema), and 1.5 oz Hop Barons Seasoning Packet until well combined.

Coat the Corn: Once the corn is grilled, remove it from the grill and let it cool slightly so it can be handled. Using a brush or a spoon, generously coat each ear of corn with the seasoned mayonnaise mixture.
