Tofu 'Egg' Salad

I love egg salad, but the process of making hardboiled eggs makes me cringe. Then I discovered tofu and the combination of tofu and Hop Barons will make you wonder why you ever boiled an egg in the first place! You can get creative with any of our seasonings, from our spicy for a little kick to our mustard rub for that extra mustard flavor. The true hero of this sandwich is the tofu though!

Ingredients
14 oz firm tofu
1/2 cup mayo
-
1/4 cup Hop Barons Spicy Bad A** BBQ Rub
1 pickle, diced
3T yellow mustard
Directions
You want to squeeze the extra juices out of the tofu. Wrap the tofu in a paper towel and place a heavy pan over it for 30 minutes.
Crumble tofu into a bowl.
Add mayo, Hop Barons Spicy Bad A** BBQ Rub, pickle and yellow mustard. Mix well and let sit in fridge for 15 minutes.
Serve on your favorite bread with lettuce and cheese or eat on crackers as a snack. Either way it is delicious and your guests won't know it is tofu!
