Most Bad A** Crispy Potatoes

These will be the best oven baked potato wedges you have ever had. Add your favorite Hop Barons seasoning and it takes it to the next level. This recipe uses our Ghost Pepper, but you can replace with any of our other seasonings.

Ingredients
4lb yukon gold potatoes
5T extra virgin olive oil
-
2T Hop Barons Ghost Pepper
Black pepper (for taste)
Salt (for taste)
Fresh parsley
1/2t baking soda
Directions
Preheat oven to 450 F (400 F if convection oven)
Peel and cut potatoes into eighths
Boil 2 quarts of water. Once boiling, add 2T kosher salt, baking soda and potatoes. Bring water back to boil and cook until knife meets little resistance (~10 minutes)
In a boil combine olive oil and Hop Barons seasoning
When potatoes are cooked, drain carefully and let site for 30 seconds. Transfer to a bowl and add olive oil mixture. Toss to coat, shaking bowl roughly. A thick mashed potato paste will form.
Transfer to an oven pan lined with parchment paper. Add to oven for 20 minutes. Using a spatula, turn potatoes and return to oven for 30 - 40 minutes. Turning a few times.
Transfer to bowl and add fresh parsley and 2T your favorite Hop Barons seasoning. Toss to coat and serve immediately.
