Guiness Bourbon Baked Beans

Ingredients
2 lb dry navy beans
1/2 lb pork jowl (or thick cut bacon) cubed

Hop Barons Coffee Rub
2 garlic clove, minced
2 medium sweet onion, chopped
2 cans Guinness
2 cups loosely packed brown sugar
1/2 cup ketchup
1 cup bourbon
1 cup pure bourbon barrel maple syrup - we used Tree Juice Maple Syrup (if you don't have bourbon barrel syrup, any pure maple syrup will do, do not use the fake stuff)

1/2 cup Hop Barons Maple Rub
1/2 cup cider vinegar
1/4 cup Worcestershire sauce
Directions
Soak beans in water for at least 10 hours, add more water if beans become uncovered
Drain beans, add to pot, cover with water and bring to boil. Lower to a simmer for 35 minutes.
Cover pork jowl (or bacon) in Hop Barons Coffee Rub. Let rest for 5 minutes. Add to skillet and cook until fat is rendered. Remove from skillet, leaving juices.
Add garlic and onions to skillet. Cook until soft (~5-7 minutes).
Once beans are done, drain and add to slow cooker. Add pork, garlic, onions and pan drippings. Mix well.
Add remaining ingredients and stir until consistent and mixed. Cover and set slow cooker to low. Cook for 12 hours stirring occasionally.
Once done, lower to warm or turn off and let rest for 2 hours. Serve and enjoy!
Tip: if beans are watery, cook on Low for an additional hour until thickened.
