2x Baked Potato Poppers

These are the tastiest 2x baked potatoes you will ever have. This recipe is easy to make and you can have fun with it by adding or changing ingredients. Yukon gold potatoes make this the perfect finger food to serve as an appetizer or side.

Ingredients
10-15 Tukon gold potatoes
4 strips thick-sliced bacon
2/3 cups sour cream

1T Hop Barons Ghost Pepper
1/2 cup shredded sharp cheddar
Black pepper (to taste)
Chopped Chives

Hop Barons Coffee Rub
Directions
Preheat oven to 350F
Pierce each potato with a fork all over. Add to oven and they are soft to touch (~20 minutes)
Meanwhile, coat bacon with Hop Barons Coffee Rub. Be generous. Cook bacon until crispy (oven or on stove).
Once bacon is done, drain on paper towel until warm to the touch. Save bacon grease. Crumble bacon into small pieces and set aside.
Once potatoes are done. Remove and let cool. Once cool to touch, cut top 1/3 off the potato. Scoop out the flesh into a bowl, leaving 1/8" flesh inside each potato. Brush inside with leftover bacon grease.
Add sour cream, Hop Barons Ghost Pepper, bacon and cheese to the potato flesh. Stir to combine using fork or spoon. Use a hand mixer if looking for extra creamy.
Add mixture back into potatoes and return to oven (or grill) until cheese begins to melt.
Remove and top with cheese, chives, Hop Barons seasoning and sour cream. Serve and enjoy!
